My name is Stacy and I enjoy being in the kitchen where sheer magic is possible and happens. Although I enjoy cooking, my true passion is baking which started at a very early age. My sole purpose for starting my blog is to share my original recipes with others—especially those who are on a special diet and feel deprived or left out due to dietary restrictions.
Developing gluten free recipes is pure joy. And I rely immensely on the baking knowledge I gained by reading Chef Bo Friberg’s tome, The Professional Pastry Chef. I appreciate and recognize baking as a science and art form as well as an expression of love and nourishment. After sending a friend who is Italian, and a recently diagnosed celiac, four gluten free varieties of biscotti based on my original recipes that he enjoyed several years prior as a Christmas gift in 2011, his gracious and heartfelt response touched me deeply. Shortly following this, in January 2012, I conquered a gluten free All-American Chocolate Chip Cookie recipe in response to a challenge. The recipient was overjoyed. My original recipe for Gluten Free Crispy & Chewy Chocolate Chip Cookies has even been improved and can now be found on the blog as Best Gluten Free Chocolate Chip Cookies. Both recipes utilize my own gluten free flour blend developed back in 2011.
These experiences provoked my interest in furthering my knowledge of gluten free baking. Right then, I vowed to learn all I could about GF baking to share gluten free versions of my original recipes and support the gluten free community whenever possible.
