With all that talk about entertaining and fruits and cakes, is it any wonder the classic retro song Come On-a My House, My House popped into my head while making our Tutti Frutti Lemon Cheesecake Bites in Snickerdoodle Cups? Recording artist Rosemary Clooney really knew what she was talkin’ about, didn’t she? And, so did Della Reese. Such the temptresses!

And, yes…this post was supposed to go live on Friday, June 28th. The reason for my tardiness? My laptop keyboard died on me very late last Thursday evening. Ugh. It was a wicked bad week for Wicked Good Kitchen as it was. In fact, I was behind and getting frustrated over the need to test yet one more time a gluten-free recipe with a separate tutorial post. You’re really gonna love this one, I promise! But, I’m telling you…I about cried. I was missing Friday—such an important blog and social media day. (A girl has goals, you know? Like, a schedule to keep with her readers and special peeps to stay in touch with via bloggy love. Right?) So, The Big Lug was my Knight in Shining Armor and took my laptop in for service when he left for work on Friday morning.

Thank goodness the keyboard was fixable and I just got it back late this evening after dinner out. However, the signs are there that we must start shopping for a new one—like, ASAP. I’m hoping for my next laptop as a birthday present. I’m a Leo, so the time is coming up soon. Only problem? I’m a bit leery of Windows 8. (Anyone out there loving Windows 8 as a laptop OS?) I’ve been hearing such dastardly things about it! But, for now, this girl is extremely grateful to have her laptop back and fully functioning. Here’s to hoping you never experience down time like this. It’s not fun. Grrr.

But, as hosts, we don’t want our lack of time to prevent us from extending the very best of what we have to offer to our family and guests. We find ourselves pining for those quick and easy but don’t-really-look-it recipes both savory and sweet—that is, we still strive for those oohs and ahhs because our guests deserve the best.

Today, I am sharing with you a simple dessert. It is easy to assemble with premade ingredients—that is, ingredients and brands you can trust. Plus, several components can be made ahead to make assembly easy about an hour or so before guests arrive. Whip them up, pop them in the fridge and then get yourself ready for your party!

Tutti Frutti Lemon Cheesecake Bites 7Wicked Good Kitchen’s Tutti Frutti Lemon Cheesecake Bites are scrumptious due to the divine Lemon Cheesecake Mousse Filling only calling for two ingredients—lemon curd (homemade or prepared) and cream cheese–which doesn’t even require softening. So easy and no-fail! Also, there’s a dab of quality strawberry preserves in the bottom of each cup to give this dessert treat that extra touch of summer berry sweetness and complement the Lemon Cheesecake Mousse.

The best part is the easy Snickerdoodle Cups. It’s one of my entertaining secrets which set these simple mini cheesecake desserts apart from others. Convenient packaged Mini Fillo (Phyllo) Cups are sprinkled with cinnamon-sugar and optional freshly grated nutmeg after being brushed with melted ghee or butter before baking for 5 minutes. That’s it, just 5 minutes in the oven to make them spectacular and taste freshly baked!

The investment of the extra time of brushing and sprinkling is so worth it. And, of course, the option still stands if you are running short on time to skip this part. But, it is one of those embellishments which makes these tiny desserts especially tasty and will make your guests feel pampered—even though they’re topped with fresh whipped cream and fresh summer berries and/or cherries. Do give them a whirl. You will be happy you did. And, your guests will love you!

Tutti Frutti Lemon Cheesecake Bites

What makes our Tutti Frutti Lemon Cheesecake Bites in Snickerdoodle Cups wicked good? A creamy-luscious, lemony cheesecake mousse filling to-die-for. (It is so good, it is hard to stop eating it from a spoon!) Scrumptious buttery-crunchy “Snickerdoodled” mini fillo (phyllo) cups to hold the to-die-for fillings to include quality strawberry preserves and freshly whipped Chantilly Cream. Summer’s best fresh berries and cherries to create a sweet and petite but light and indulgent “tutti frutti” treat your guests will enjoy as well as remember. And, did we mention how quick and easy these little babies are to make? What’s not to love?

Ingredients

  • For the Snickerdoodle Cups
  • 4 packages (60 shells) Mini Fillo (Phyllo) Shells, such as Athens®
  • 4 tablespoons (60 grams) organic ghee, melted (or unsalted butter)
  • ¾ cup (150 grams) granulated cane sugar
  • 1 tablespoon (9 grams) ground cinnamon, such as McCormick®
  • Freshly grated whole nutmeg, optional
  • For the Lemon Cheesecake Mousse Filling
  • 1 package (8 ounces/226 grams) cream cheese, such as Philadelphia®
  • 1 jar (11.5 ounces/326 grams) lemon curd, such as Stonewall Kitchen
  • For the Berry Jam Filling
  • 1 jar (12 ounces/340 grams) strawberry preserves, such as Smucker’s® Orchard’s Finest®
  • For the Chantilly Cream
  • 1 pint (473 ml) heavy whipping cream
  • 1 tablespoon (12.5 grams) granulated cane sugar
  • 1 teaspoon (5 ml) pure vanilla extract
  • Pinch of salt, optional
  • For the “Tutti Frutti” Garnish
  • Fresh berries, such as blackberries, blueberries, raspberries & strawberries, sorted, rinsed & dried
  • Fresh Bing cherries, sorted, rinsed & dried
  • Fresh mint leaves, optional
  • Special Equipment
  • Pastry brush
  • Two pastry bags or large zip-top food storage bags

Directions

Prepare the Snickerdoodle Cups: Arrange oven rack in middle of oven and preheat oven to 350º F. Line cookie sheet with baking parchment and set aside. Open packages of mini fillo (phyllo) cups and place on a clean work surface. (I like to use wax paper or parchment.) Place melted ghee (or butter) nearby with pastry brush. In a small bowl, combine sugar and cinnamon. If desired, stir in freshly grated nutmeg.

Working over sheet of wax paper or parchment, brush the insides, bottoms and top fluted edges of each fillo (phyllo) cup. Sprinkle cinnamon-sugar over bottoms of cups and place on baking sheet evenly spaced apart. Sprinkle cinnamon-sugar over the tops of each cup. Bake for 5 to 6 minutes in preheated oven until crisp, lightly browned and fragrant. Transfer to wire racks to cool completely.

Prepare the Lemon Cheesecake Mousse Filling: Using an electric stand mixer fitted with paddle attachment, or handheld mixer and large bowl, beat cream cheese until creamy and smooth. Add lemon curd and beat until fully incorporated scraping down sides of bowl as necessary.

Prepare the Chantilly Cream: Using an electric stand mixer fitted with paddle attachment, or handheld mixer and large bowl (we like to use our iSi Cream Whipper), blend the cream, sugar, vanilla and, if using, salt. Whip to soft but semi-firm peaks for piping. Place bowl in refrigerator until ready to place into pastry bag or zip-top bag with corner snipped for piping during assembly.

To Assemble the Cheesecake Bites: Prepare pastry bag fitted with fine decorating tip or zip-top bag and fill with Lemon Cheesecake Mousse Filling expelling as much air as possible and twisting closed. If using zip-top bag, snip one corner for piping. Prepare the second bag similarly with chilled Chantilly Cream.

To each baked fillo (phyllo) cup, add ¼ teaspoon strawberry preserves for “jam filling”. Next, pipe 1 to 2 teaspoons Lemon Cheesecake Mousse Filling over jam filling. Do the same with Chantilly Cream. Finally, top each filled cup with fresh berries or a cherry. Chill in refrigerator for 1 hour or until ready to serve. Just before serving, place a few tiny mint sprigs around platter or onto cups.

To Serve Cheesecake Bites: Serve immediately from chilled platter.

Recipe Notes

Tips:

Snickerdoodle Cups may be prepared the morning before your event. Keep loosely covered at room temperature until ready to fill and assemble dessert cups.

Cinnamon-sugar can be prepared the day before.

Sort, rinse and dry fruit the morning of your party and have ready to make assembly easy.

Lemon Cheesecake Mousse Filling can be prepared the day or night before. Keep covered and refrigerate until ready to assemble dessert cups.

Should the need arise, if other components are prepared in advance, place baked cups in freezer for 5 minutes to speed the cooling process and ready them for quick assembly.
