The Buttercream Series continues here at Wicked Good Kitchen and this time it is with a fun seasonal twist!

My friends, today I am thrilled to finally post this exceptional cream cheese buttercream, Pumpkin Spice Caramel Cream Cheese Buttercream. I am telling you, you simply do not want to miss making this extraordinary frosting for your autumn-inspired cakes, cupcakes and bars this season. From yellow cakes to spice cakes and pumpkin spice cakes (just imagine it on a chocolate cake or a coffee or mocha flavored cake), this buttercream is an absolute dream. Children will love this buttercream on their cupcakes!

It was last November, just before Thanksgiving that I made this buttercream and the word phenomenal doesn’t even cut it to describe its flavor profile. I mean, it tastes just like Pumpkin Spice Cheesecake with Caramel Sauce on top! It was very difficult to put the spoon down after my first taste and I even made a trip to the fridge for another bite. Mmm…just like Pumpkin Spice Ice Cream with Caramel Sauce on top. I. Could. Not. Stop. (Help me.)

Pumpkin Spice everything is all the rage this time of year and the media and comics in the entertainment industry enjoy bashing it to poke fun—especially at the Pumpkin Spice Latte craze. But, don’t let this hilarious backlash dissuade you from making and enjoying this special cream cheese buttercream, Pumpkin Spice Caramel Cream Cheese Buttercream. It truly beats a Pumpkin Spice Latte in my book—any day of the week!

This particular cream cheese buttercream was a huge hit with The Big Lug. Right away, he requested my best Pumpkin Spice Cake with this buttercream on top. There’s just something about pumpkin and spices that gets to a man’s senses. Wasn’t there a study on this years ago revealing the favorite scents of men and it included pumpkin pie and doughnuts? I think it’s the nutmeg. 🙂

As with the other cream cheese buttercreams in this series, this recipe is yet another variation of my recipe for Best Ever Cream Cheese Buttercream. This fabulous buttercream base is rich and buttery, melts on the tongue and is truly divine. Now, with the addition of both caramel or salted caramel, even dulce de leche, and pumpkin butter (that has been drained), our cream cheese buttercream becomes magnificently extraordinary. As stated previously, the secret to making an exceptional Cream Cheese Buttercream is to use equal amounts, by weight, of butter to cream cheese—that is, 8 ounces each. This, of course, translates to two (2) sticks of butter and one (1) brick of cream cheese. Most cream cheese frosting recipes call for far too much cream cheese (read: too much moisture and not enough fat) and the frosting just does not want to pipe well. In addition, the frosting is so loosey-goosey that cake layers actually slide. No fun—especially if transporting the cake. Essentially, you would have to add an incredible amount of confectioners’ sugar to stiffen it up in order to pipe nicely. And, for most of us, this translates to a frosting that is just too cloyingly sweet.

Just in case you missed it in previous posts, this is what I wrote as to how my Cream Cheese Buttercream recipe originated:

“Just as with my carrot cake recipe, my Cream Cheese Buttercream recipe was inspired by the one found in my New Better Homes and Gardens Cookbook. It is quite the opposite of Mrs. Fields’ recipe that calls for two 8-ounce packages (16 ounces) of cream cheese and only one stick (½ cup or 4 ounces) of salted butter. The BHG recipe calls for one 8-ounce package of cream cheese to one stick of butter (again, at 4 ounces). However, I increased the amount of butter from the BHG recipe to create a true “Cream Cheese Buttercream” in a 1:1 ratio (8 ounces to 8 ounces) of cream cheese to butter with enough confectioners’ sugar to thicken the consistency to pipe beautifully. Sometimes, I even use one stick of salted butter with one stick of unsalted for a nice salty-sweet balance.”

Today’s recipe is based on our recipe for Caramel Cream Cheese Buttercream. However, with this particular recipe for cream cheese buttercream, when adding pumpkin butter—even though excess moisture was drained on paper toweling—it was necessary to add an extra ¼ cup (½ stick) or 4 tablespoons of extra butter to reach the proper buttercream consistency.

Pumpkin Spice Caramel Cream Cheese Buttercream

Rich, ultra-creamy, light and fluffy and packed with autumnal pumpkin spice flavors, this incredible buttercream frosting has a slight tang from cream cheese, has the texture of mousse and tastes just like pumpkin spice cheesecake with caramel sauce! The perfect seasonal buttercream for pumpkin spice cakes and cupcakes!

Ingredients

  • 1¼ cups (2½ sticks or 283 grams) unsalted butter, softened (or 1 stick salted & 1 stick unsalted)
  • 4 ounces (½ 8-ounce package/113 grams) chilled cream cheese, such as Philadelphia®
  • ¼ cup (112 grams) homemade or prepared caramel, salted caramel sauce or dulce de leche, thick at room temperature
  • ¼ cup (72 grams) homemade or prepared pumpkin butter, such as Trader Joe’s®, drained (see Notes below recipe)
  • 2 teaspoons (10 ml) pure vanilla extract, such as Nielsen-Massey®
  • 4 cups (480 grams) confectioners’ sugar, spooned in cup, leveled off & sifted

Directions

Using an electric stand mixer fitted with paddle attachment, or handheld mixer and large bowl, beat butter on medium speed until creamy. Add cream cheese, caramel, pumpkin butter and vanilla; beat until fully incorporated. Gradually increase mixer speed to high and continue beating until light and fluffy, scraping down the sides of bowl as necessary with rubber spatula.

Gradually add confectioners’ sugar, beating on low speed (stir), until well combined. Beat on high speed until well combined and smooth while scraping down sides of bowl as necessary, about 2 minutes.

Before filling, frosting, icing and piping cakes, rebeat buttercream to ensure smoothness.

Recipe Notes

Tips:

To Drain Pumpkin Butter: This technique will drain the excess moisture from the pumpkin butter that is not needed in this recipe. On a baking sheet or plate lined with a few sheets of clean paper toweling, and using a rubber spatula or angled metal spatula, spread room temperature pumpkin butter into a thin layer onto the toweling to drain, about 3 to 5 minutes. Carefully scrape and slide the pumpkin butter off the toweling and into work bowl using spatula.

If not using immediately, the buttercream can be refrigerated for up to 2 to 3 days in an airtight container. Before using, bring to room temperature before beating smooth again.

If using the buttercream to pipe details, be sure to use chilled hands when handling pastry bag as warm hands can melt the buttercream.

  4. Hi Stacy,
    This recipe didn’t work for me, and I’m not sure why. Your prior buttercream frosting recipes have been perfect for me.
    I followed the above directions to the finest detail, my frosting is not the dark orange yours is (no big deal), but also- it has little pumpkin flavor and little caramel flavor. I am assuming the 1/4 cup of each is accurate? The cream cheese flavor is also very mild with using just 4oz.

    I ended up adding the other 4oz of cream cheese, adding more pumpkin butter and more caramel as well as pumpkin spice. It has a good flavor but the caramel is still pretty lost (hard to distinguish from the powdered sugar- I don’t taste a deeper richer flavor).

    I wonder if it would be easier to just do your cream cheese buttercream frosting and just add pure pumpkin puree?

    I welcome your thoughts!
