Making Red Raspberry Heart-Shaped Ice Cubes at 2:00 a.m. (Don’t look at my dishpan hands!)

The inspiration for this exceptional cocktail was the Island Jewel Cocktail that was ordered by my husband with my favorite berry in mind and especially made for me by the bartender on the island of Maui during our Hawaiian honeymoon. The cocktail contained coconut milk and pineapple juices, fresh red raspberries and Chambord® liqueur. I absolutely loved it.

The perfect “pretty in pink” cocktail for Valentine’s Day and special occasions! Our Love Charm Martini Cocktail is made with creamy white chocolate liqueur and amaretto or crème de cacao, with a kiss of deep red raspberry syrup. This special cocktail, with pretty floating red raspberry heart-shaped ice cubes, is like drinking a white chocolate raspberry truffle! Includes variation for Chambord Love Charm Martini Cocktail.

Ingredients

  • For the Optional Rim Garnish
  • ½ cup Natural Pink Fairy Dust Sugar Crystal Sprinkles, recipe by Wicked Good Kitchen
  • ½ ounce white crème de cacao, such as Marie Brizard®
  • For the Cocktail Garnishes
  • Fresh red raspberries, for cocktail pick
  • ½ ounce prepared or Homemade Raspberry Syrup, recipe by Wicked Good Kitchen
  • Red raspberry heart-shaped ice cubes, prepared the night before (see Notes)
  • For the Cocktail
  • Ice for cocktail shaker
  • 2 ounces Godiva® white chocolate liqueur
  • 1 ounce vodka
  • 1 ounce amaretto or white crème de cacao, such as Marie Brizard®
  • 1 ounce Raspberry-Peach Grand Marnier® liqueur
  • 2 ounces half and half cream or coconut milk
  • ½ ounce prepared or Homemade Raspberry Syrup, recipe by Wicked Good Kitchen
  • Special Equipment
  • Cocktail shaker with strainer
  • Martini glass
  • Rimmed shallow plates for rim garnish, optional

Directions

Prepare the Rim Garnish: Place crystal sugar into a rimmed shallow plate. Pour crème de cacao into a rimmed shallow plate. Dip rim of martini glass into the plate with the liqueur, then immediately dip into the plate with the sugar to evenly coat rim.

Prepare the Cocktail Garnishes: Skewer red raspberries onto cocktail pick and pour prepared or Homemade Raspberry Syrup into cocktail glass, set aside.

Prepare the Cocktail: Fill cocktail shaker with ice. Add remaining cocktail ingredients and shake vigorously, about 20 seconds. Strain into prepared martini glass and garnish as desired. Serve immediately.

Recipe Notes

Tips:

Cocktail recipe can easily be doubled to serve two.

Homemade Raspberry Syrup can be used before sugaring cocktail rim if more raspberry flavor is desired.

Prep time does not include making the optional sugar crystals, raspberry syrup or raspberry heart-shaped ice cubes.

To Make Red Raspberry Heart-Shaped Ice Cubes: The night before, slice several raspberries in half by placing on cutting board rounded side up and slicing in half with a small paring knife. To each half, cut a small notch in the center of the open or top part of the berry with two angled cuts to create a heart shape. Place heart-shaped raspberry slices into heart-shaped ice cube trays cut-side up. Place in freezer to freeze overnight. Once frozen, unmold just before placing in cocktails berry-side up.

Variation:

For Chambord Love Charm Martini Cocktail: Simply add 1 ounce Chambord liqueur in lieu of amaretto or white crème de cacao. Note: Keep in mind that the Chambord liqueur will add a violet color to your cocktail and it will not be light pink in color but a light red violet color.
